Roast Zucchini Recipe

2 pounds zucchini
Trim and cut in half crosswise, then each half quartered
Roast 15 to 20 minutes at 450 degrees
Top with 1 tablespoon freshly grated Parmesan

3 cups thinly sliced zucchini
1 cup Bisquick mix
1/2 cup chopped onion
1/2 cup Parmesan cheese
1 clove garlic, crushed
4 eggs
2 tablespoons parsley
1/2 teaspoon salt
1/2 teaspoon seasoned salt
1/2 cup vegetable oil
Grease 9 x 12-inch pan well and spread mixture into pan.
Bake at 350 degrees for 30 minutes.
Cut in desired-size pieces.
