Cream Sauce Recipe

This recipe makes a thin sauce. If you want a thick sauce, use 4 tablespoons butter and 4 tablespoons flour.

1 tablespoon butter, melted
1 tablespoon flour
1/2 teaspoon salt
Dash cayenne pepper
1 cup milk

Blend flour, salt, and pepper with the melted butter.

Gradually add milk.

When mixture is smooth, stir over medium heat until it thickens.

Cook 5 minutes over low heat.

Makes 1 cup.

Hollandaise Sauce Recipe

2 egg yolks
1 tablespoon lemon juice
Salt and cayenne pepper to taste
1/4 pound butter, melted

Place first 3 ingredients in a blender container. Run on low speed 5 seconds. Pour butter in steady stream, blending at same speed just until sauce is thickened.
