<p>I got this recipe from my husband&#8217;s cousin Donna, and it sounds so great!</p>
<p>1 box of white, yellow, strawberry, or lemon cake mix<br />
1 cup sugar<br />
4 cups cut up rhubarb<br />
1 pint of whipping cream (not whipped) </p>
<p>Mix cake mix according to directions. </p>
<p>Mix sugar in with rhubarb. </p>
<p>Put cake in greased pan, sprinkle rhubarb on top, and pour 1 pint (2 cups) of whipping cream over all. </p>
<p>Bake in 350 degree oven for 1 hour and 20 minutes -1 hour and 30 minutes. Usually 1 hour and 20 minutes is long enough. </p>
<p>Let cool. </p>
<p>Keep in fridge. </p>
<p>Top with cool whip or a scoop of ice cream. </p>
<p>Variation: use strawberries or raspberries instead of rhubarb</p>

1/2 tsp. baking soda<br />
1/3 cup melted butter or margarine</p>
<p>Combine sugar, 1 tablespoon flour and cinnamon.</p>
<p>Add rhubarb; toss.</p>
<p>Place in 9 x 13 greased pan.</p>
<p>In bowl combine brown sugar, baking, powder, baking soda, and remaining flour.</p>
<p>Stir in melted butter.</p>
<p>Sprinkle over rhubarb.</p>
<p>Bake at 350 for 40 minutes.</p>
<p>For a variation, use 2 cups chopped strawberries and 2 cups chopped rhubarb.</p>

1 teaspoon baking soda<br />
1 teaspoon salt<br />
2 eggs<br />
1 cup buttermilk<br />
2/3 cup vegetable oil<br />
2 teaspoons vanilla extract<br />
2 cups diced fresh or frozen rhubarb<br />
1 cup chopped nuts (walnuts or pecans)</p>
<p><strong>Topping</strong><br />
1/4 cup packed brown sugar<br />
1/4 cup chopped nuts<br />
1/2 teaspoon ground cinnamon</p>
<p>In a large bowl, combine the flour, brown sugar, baking soda, and salt.</p>
<p>In a small bowl, beat the eggs, buttermilk, oil, and vanilla.</p>
<p>Stir into dry ingredients just until moistened.</p>
<p>Fold in rhubarb and nuts.</p>
<p>Fill greased or paper-lined muffin cups 3/4 full.</p>
<p>Bake at 375 degrees for 18 to 20 minutes or until a toothpick comes out clean.</p>
<p>Cool for 5 minutes before removing from pans to wire racks.</p>
<p>Serve warm.</p>
