Amy’s Everyday Cookies Recipe

This is one of the best cookie recipes I have. I got this recipe from a neighbor in Rochester, MN, in the mid 1970s. It has always been one of my favorites. I now have a 10-year-old granddaughter named Amy. She and her brother Adam and I made these cookies yesterday! They are soooooooo good!

1 cup white sugar
1 cup brown sugar
1 cup butter
1 cup vegetable oil
1 large egg
1 teaspoon vanilla
3-1/2 cups flour
1 teaspoon salt
1 teaspoon soda
1 teaspoon cream of tartar
1 cup Rice Krispies
3/4 cup oatmeal (quick)
3/4 cup coconut
1/2 cup nuts

Cream sugars and butter.

Add oil.

Add egg and vanilla.

Mix flour, salt, soda, and cream of tartar. Add to mixture.

Add Rice Krispies, oatmeal, nuts, and coconut.

Chill 1/2 to 1 hour.

Make into small balls. Press flat with a glass dipped in sugar.

Bake at 350 degrees for 15 minutes.
