2 eggs
2 cups sugar
1 cup oil
2 squares unsweetened chocolate
2 cups grated zucchini
3 cups flour
1 teaspoon salt
1 teaspoon vanilla
1/4 teaspoon baking powder
1 teaspoon baking soda
1 cup chopped nuts
Beat eggs until lemon colored.
Beat in sugar and oil.
Melt chocolate and add along with zucchini and vanilla.
Sift flour, salt, baking powder, baking soda, and add.
Fold in nuts.
Makes 2 loaves.
Bake at 350 degrees for 1 hour or a little longer.

1 quart milk
3 squares semi-sweet chocolate
1 teaspoon ground cinnamon
2 eggs
Heat milk just to scalding in large pan.
Stir in chocolate and cinnamon, until melted.
Beat with a rotary beater until smooth.
Beat eggs well in a small bowl. Slowly beat in about 1 cup hot mixture. Then beat back into pan.
Heat slowly, stirring.
Beat again until frothy.
Ladle into heated mugs. Use cinnamon stick as stirrer.
Makes 6 servings.

Here is a great tasting easy chocolate cake to make. One of my kids wrote “EXCELLENT” on the recipe. I remember it being nice and moist!
3/4 cup butter
1-3/4 cups sugar
2 eggs
1 teaspoon vanilla
2 cups all-purpose flour
3/4 cup cocoa
1-1/4 teaspoons baking soda
1/2 teaspoon salt
1-1/3 cup water
Cream butter and sugar until light and fluffy.
Add eggs and vanilla. Beat 1 minute at medium speed.
Combine flour, cocoa, baking soda, and salt. Add alternately with water to creamed mixture.
Pour batter into two greased and floured 8 inch cake pans.
Bake at 350 degrees for 35 to 40 minutes.
Cool.
Frost with chocolate frosting.

I got this recipe from my sister-in-law. She made it when we were visiting her in Minnesota. I loved this cake! I keep telling myself that it is good for me because it has a vegetable in it!
1/2 cup butter
1/2 cup oil
1-3/4 cups sugar
2 eggs
1 teaspoon vanilla
1/2 cup sour milk
2-1/2 cups flour
1/4 cup cocoa
1 teaspoon soda
scant pepper
1 teaspoon salt
2 cups raw zucchini
Mix together.
Place in a 9 x 13 inch pan.
Add 1/2 cup chocolate chips on top.
Bake 40 to 45 minutes at 325 degrees.
Enjoy your vegetable!

6 ounce package chocolate chips
1/2 cup sugar
1/2 cup milk
1/2 cup chunky peanut butter
Melt chocolate chips, sugar, and milk – either in a double boiler or in the microwave

Add peanut butter, and blend until smooth.
Pour into fondue pot over burner with heat just enough to keep warm but not bubbly.
Have ready small dishes with pound cake cut into cubes, angel food cake, pineapple chunks, banana slices, apple slices, marshmallows, orange slices, and maraschino cherries.
