<p>1 pound sliced bacon or ham, diced<br />
1 medium sweet onion, chopped<br />
6 eggs, lightly beaten<br />
4 cups frozen shredded hash brown potatoes, thawed<br />
2 cups shredded Cheddar cheese<br />
12 ounces (1-1/2 cups) small curd cottage cheese<br />
1-1/4 cups shredded Swiss cheese</p>
<p>In a large skillet, cook meat and onion until meat is crisp. Drain. </p>
<p>In a large bowl, combine the remaining ingredients.</p>
<p>Stir in meat mixture. </p>
<p>Transfer to a greased 13 inch x 9 inch x 2 inch baking dish.</p>
<p>Bake, uncovered, at 350 degrees for 35-40 minutes or until set and bubbly. A knife inserted near the center should come out clean.</p>
<p>Let stand for 10 minutes before cutting.</p>
<p>Serves 12.</p>

<p>1 lb bulk sausage<br />

8-10 eggs<br />
4 tbsp sour cream<br />

8 tbsp salsa<br />
1 cup grated Cheddar Cheese<br />
1cup grated Monterey Jack or Mozzarella cheese</p>
<p>Saute sausage, mushrooms, and onions in large skillet until done. </p>
<p>Drain and set aside. </p>
<p>Combine eggs and sour cream and season with salt and pepper. </p>
<p>Whip egg mixture one minute in a blender and pour into 9&#215;13 inch baking dish. </p>
<p>Bake in preheated 400 degree oven until softly set (5-8 minutes). </p>
<p>Spoon salsa evenly over top of eggs. </p>
<p>Spread sausage mixture over top. </p>
<p>Sprinkle with cheese. </p>
<p>Refrigerate until 30 minutes before serving time. </p>
<p>Then bake at 325 degrees for 30 minutes. (Makes 10 servings)</p>

<p>12 slices Canadian bacon &#8211; sliced thin<br />
1 1/2 cups Swiss cheese &#8211; grated<br />
12 eggs<br />
1 cup whipping cream<br />
1/2 cup Parmesan cheese<br />
Salt<br />
Pepper<br />
Paprika<br />
Parsley</p>
<p>Lightly grease a 13 x 9 pan. </p>
<p>Layer the bacon on the bottom of the pan, followed by the Swiss cheese. </p>
<p>Break the eggs over the Swiss cheese, being careful not to break the yolks. </p>
<p>Pour the cream over the eggs. </p>
<p>Bake at 450 for 10 minutes.</p>
<p>Remove from the oven and sprinkle with the Parmesan cheese. </p>
<p>Sprinkle with the desired amount of salt and pepper and paprika. </p>
<p>Bake for another 8-10 minutes. </p>
<p>Let stand for 5 &#8211; 10 minutes before serving and sprinkle with parsley. </p>

<p>Chop medium onion, and add to 8 oz. can of drained mushrooms. Saute in butter until soft. Set aside.</p>
<p>Whip up a mixture of 10 eggs and 1 pint whipping cream, salt, and pepper. Set aside.</p>
<p>Brown in frying pan 1 lb. package bulk Jimmy Dean sausage until pink is gone.</p>
<p>Spray 9&#215;13 pan with cooking spray.</p>
<p>Pour in thin layer of egg mixture &#8211; not all of it.</p>
<p>Cover with sausage mixture.</p>
<p>Sprinkle with sauteed mushrooms and onions.</p>
<p>Cover with 2 cups shredded cheese.</p>
<p>Pour egg mixture evenly over top.</p>
<p>Bake at 350 until brown for about 20-25 minutes.</p>
<p>Cut into squares as needed and re-heat in microwave.</p>

1/4 to 1/2 cup shredded cheddar or Swiss cheese</p>
<p>Preheat oven to 350 degrees.</p>
<p>Melt butter in a medium skillet over medium heat.</p>
<p>Add mushrooms and onions. Saute 2 minutes.</p>
<p>Add ham. Saute 2 minutes.</p>
<p>Add broth. Cook 3 minutes.</p>
<p>Add pepper.</p>
<p>Divide mixture among 4 well-buttered ramekins. </p>
<p>Break 1 egg into each and bake 15 minutes.</p>
<p>Sprinkle cheese on top.</p>
<p>Cook 5 minutes or until eggs are set.</p>
