Zucchini Quick Bread Recipe

1-1/2 cups all-purpose flour
1 teaspoon ground ginger
1-1/2 teaspoons baking powder
1/4 teaspoon salt
1 cup granulated sugar
1/4 cup oil
2 eggs
grated peel and juice of 1 lemon or lime
1 cup shredded fresh unpeeled zucchini squash

Lightly grease and flour a 9 inch x 5 inch loaf pan. Set aside.

In a large mixing bowl, combine the flour, ginger, baking powder, salt, and sugar. Mix well.

Add the oil, eggs, lemon peel, lemon juice, and shredded zucchini. Stir to combine. Do not overmix. Batter should not be smooth.

Pour batter into prepared pan. Using a rubber spatula, smooth the top.

Bake at 350 degrees for 50 to 60 minutes or until a wooden toothpick inserted in the center of the bread comes out clean.

Transfer pan to a wire rack to cool slightly. Turn bread out onto a wire rack and cool completely.

Makes 12 slices.
