Rhubarb Crisp Recipe

Of all the rhubarb recipes I have, this is by far my favorite (and the favorite of my entire family). When I lived in Minnesota, I made it a lot. Now that I live in Texas, it is hard to find rhubarb. When my mother-in-law send me rhubarb in the mail, this is the rhubarb recipe that I use!
1 cup flour
3/4 cup oatmeal (uncooked)
1 cup brown sugar
1/2 cup melted shortening
1 teaspoon cinnamon
Mix this together until crumbly. Press 1/2 of this mixture into a greased 9 inch square pan. Pour in 4 cups rhubarb.
Combine:
1 cup white sugar
1 cup water
1 teaspoon vanilla
2 tablespoons cornstarch
Cook over low heat until thick and clear. Pour over rhubarb and top with remaining crumbs.
Bake at 350 degrees for 1 hour.
