Norwegian Lefse Recipe

Although this recipe was not my grandmother’s recipe, it makes me think of her. We used to eat fresh lefse with butter and brown sugar or with butter and cinnamon sugar. Others in the family ate it with jam. As a child, I always thought it was the best. I have not had it in years! I really don’t have a category for it – the closest is bread, but lefse is not bread! Lefse is a staple of Norway and a kind of potato pancake.

4 cups water
1/2 cup butter
2 teaspoons salt
2 teaspoons sugar

Combine the above ingredients, and boil until the butter melts.

Remove from heat and add 3/4 cup milk.

Add 5 cups potato flakes.

Refrigerate overnight.

Take 2 heaping cups potato mixture and add 3/4 cup flour.

Knead flour in and make into roll. Slice and roll thin.

Bake on a hot (500 degree) lefse iron.

Steam between towels.
