Old English Caramel Apple Recipe

This recipe truly makes me hungry for caramel apples!

1/2 cup sugar
1/2 cup firmly packed brown sugar
1 tablespoon cornstarch
1/2 cup 1/2 and 1/2
1/2 cup butter
1/4 cup chopped pecans, toasted
1/2 teaspoon vanilla
3 medium apples

In a 2 quart saucepan, combine sugars and cornstarch. Stir in 1/2 and 1/2. Add butter.

Cook over medium heat, stirring constantly, until mixture comes to a full boil (6 to 10 minutes). Boil 1 minute.

Stir in pecans and vanilla.

Let cool 15 minutes.

Meanwhile, core and chunk apples, and place in six individual bowls.

Serve about 1/3 cup warm sauce over each serving of apples.
