Spinach Salad Recipe

This is the first recipe I ever tasted made from spinach. I always thought that spinach was “gross,” so I had never tasted it. We had dinner at a friend’s house, and she served this. Of course, I had no choice but to eat it! I found out that I loved fresh spinach, and I got the recipe that very night. That was back in the early 1970s so I have had this recipe for a long, long time. I still enjoy it!
Salad Dressing:
1/2 cup soy sauce
2 tablespoons fresh lemon juice
1/2 teaspoon black pepper
1-1/2 teaspoon sugar
1/8 medium onion
1-1/2 teaspoon sesame seeds
1 cup vegetable oil
Mix all together except the vegetable oil in a blender. Blend until the onion is pulverized. Slowly add oil, and blend a few more seconds until thoroughly mixed.
Salad:
2 boxes fresh spinach
1 box sliced fresh mushrooms
1 can sliced water chestnuts
1/2 can bean sprouts
Mix salad together and serve with salad dressing.
This makes a lot of salad. I remember eating it for days after I made it. You could make 1/2 a recipe if you didn’t want this much.
