Baked Caramel Corn Recipe

This recipe is from the lady who used to live next door to us in Minnesota about 25 years ago!

1 cup butter
2 cups brown sugar
1/2 cup dark corn syrup
1 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon vanilla
6 quarts popped corn

Melt butter, stir in brown sugar, syrup, and salt.

Bring to a boil - stirring constantly. Boil without stirring for 5 minutes.

Remove from heat - stir in soda and vanilla.

Pour this mixture gradually over the popped corn. Mix well.

Put into 2 shallow baking pans.

Bake at 250 degrees for 1 hour. Stir every 15 minutes.

Remove from oven. Spread out on cookie sheet until cool.

Break apart.

Store in tightly covered container.

Makes 3 quarts.
