Mexican Wedding Cakes Recipe

This is one of our very favorite Christmas cookie recipes. We have been making it since the 1960s… that is a long time! I plan to make it again this afternoon! Another name for this excellent cookie is Russian Tea Cakes.

1 cup butter
1 cup powdered sugar
1/4 teaspoon salt
1 teaspoon vanilla
2 cups flour
1/2 cup ground pecans (or walnuts)

Combine butter, sugar, salt, and vanilla. Cream until fluffy.

Mix in flour and nuts.

Shape into balls, about the size of a walnut.

Bake at 400 degrees on an ungreased cookie sheet for 8 to 10 minutes.

Remove from the oven, and roll in more powdered sugar while hot.

Let cool on wire rack, then roll again in powdered sugar.

Store in air-tight container.

Makes 5 dozen cookies.
