Lasagna Recipe

Meat Sauce:
2 tablespoons olive or salad oil
1/2 cup finely chopped onion
1 clove garlic, minced
2 tablespoons finely chopped parsley
1 pound ground beef
1/2 pound ground pork
1 teaspoon basil
2 6-ounce cans tomato paste
1 pound 12-ounce can Italian or whole tomatoes, undrained
1/2 teaspoon oregano
1 tablespoon salt
1/4 teaspoon pepper
2 tablespoons sugar

Lasagne:
8-ounce package lasagne noodles, cooked and well drained
15-ounce carton ricotta cheese
1 pound mozzarella cheese, grated
3-ounce can grated Parmesan cheese

Sauce:
Heat oil in large, heavy skillet.

Saute onion, garlic, and parsley until onion is tender.

Add beef and pork, cooking until meat is well browned. Drain excess fat.

Add remaining sauce ingredients. Stir to mix.

Simmer covered 2 hours. Stir occasionally.

To Assemble:
Grease 9 inch x 13 inch x 12 inch baking dish.

Spoon 1/3 of meat sauce evenly into bottom of dish.

Over sauce, layer a third each noodles, ricotta, mozzarella, and Parmesan. Repeat two more times, beginning with sauce and ending with Parmesan.

Bake uncovered at 350 degrees for 45 to 50 minutes or until cheese is melted and the top is browned.

Serves 9 to 12.
