Double Divinity Candy Recipe
Posted by Grandma Jeanne on December 6, 2005

This recipe requires some work, but if you love divinity, it is definitely worth it!
2 cups sugar
2/3 cup water
1/2 cup light corn syrup
2 egg whites, slightly beaten
1 teaspoon vanilla
Dash of salt
First syrup:
Combine 1/2 cup sugar and 1/3 cup water, and cook until small amount of syrup forms a soft ball in cold water (240 degrees). Cool slightly.
Second syrup:
Cook remaining 1-1/2 cups sugar, 1/3 cup water, and corn syrup until it forms a hard ball in cold water (254 degrees).
Add first syrup slowly to egg whites, beating constantly about one to two minutes or until mixture loses its gloss. Add second syrup the same way.
Add vanilla and turn into greased pan.
Cut in squares when cold.
This candy is softer and creamier than the regular divinity.
Makes about 40 pieces.
